Let us eat cake : Lauren Chattman's Nutella-Swirl Pound Cake



Yes it is Cake and yes it is Cake with Nutella. Take a look, you can see the soft and moist cake and you know it's good. I don't have to tell you that it`s a delicious, satisfying naughty cake! I will not share you will have to make your own.







Nutella-Swirl Pound Cake by Lauren Chattman

Ingredients
1 1/2 cups all-purpose flour, plus more for dusting
4 large eggs, at room temperature
2 teaspoons pure vanilla extract
3/4 teaspoon baking powder
1/4 teaspoon salt
2 sticks unsalted butter, softened
1 1/4 cups sugar
One 13-ounce jar Nutella

Preheat the oven to 325°. Lightly grease and flour a 9-by-5-inch loaf pan, tapping out any excess flour. In a glass measuring cup, lightly beat the eggs with the vanilla. In a medium bowl, whisk the 1 1/2 cups of flour with the baking powder and salt.
In a large bowl, using a handheld mixer, beat the butter with the sugar at medium-high speed until fluffy, about 3 minutes. With the mixer at medium-low speed, gradually beat in the egg mixture until fully incorporated. Add the flour mixture in 3 batches, beating at low speed between additions until just incorporated. Continue to beat for 30 seconds longer.
Spread one-third of the batter in the prepared pan, then spread half of the Nutella on top. Repeat with another third of the batter and the remaining Nutella. Top with the remaining batter. Lightly swirl the Nutella into the batter with a butter knife. Do not overmix.
Bake the cake for about 1 hour and 15 minutes, until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 15 minutes. Invert the cake onto a wire rack, turn it right side up and let cool completely, about 2 hours. Cut the cake into slices and serve.

Healthy Deliciousness : Whole Wheat Buttermilk Waffles



For a long time I was not able to think about food. I was not in the mood for food.

Things had happened in the Families that had to have priority but now that all is good again I want to have fun.

What better way to begin than with something delicious that is healthy enough that you can have a second helping without feeling bad.

Give it a try, maybe make it your own by adding nuts, fruits or oats.


Whole Wheat Buttermilk Waffles

1/3 cup Butter

2 cups Whole Wheat Flour

2 teaspoons Baking Powder

2 Tablespoons Powdered Sugar

1/2 teaspoon Salt

2 whole Eggs

1 1/2 cup Buttermilk

1 teaspoon Pure Vanilla Extract

Melt butter in microwave and set aside to cool.
Separate the egg yolks from the whites and beat the egg whites to soft peaks.
Whisk together the dry ingredients in a large bowl and preheat your waffle iron.
Whisk the egg yolks together with the buttermilk, butter, vanilla and sugar.
Now add the dry into the wet, this way you will not have flour sticking to the bottom of the bowl.
As soon as the waffle iron is ready slowly fold in the egg whites.
Ladle into the waffle iron and cook until golden brown and delicious.

Makes 10 square waffles.

Muffin Tin Monday : Sticky Chicken



Finally I was able to get it together enough to have a Muffin Tin Monday.
If you don`t know what I am talking about take a little trip over to Muffin Tin  Mom and learn all about it.
This week the Twins had a Tin for Two.
Sticky Chicken Drums ( Ingredients and How to at the end of this post), Red Bell Pepper, Cucumber, Carrot,  1 Minute older had Ketchup, 1 Minute Younger had Mayo, there was some fresh Pretzel/Brezel ( How I made them you can read Here!), Mini Smartis and Apple as Dessert.



Sticky Chicken

8 - 12 chicken legs and/or thighs
1 cup ketchup
1/4 honey
1 /3 cup brown sugar ( if you want it sweeter add more )
1/2 cup Worcestershire Sauce or Soy Sauce if you like it salty  
Minced or crushed garlic

Put the chicken into a Ziplock Bag  and add all the other Ingredients. close the bag and give it a good squish. ( this I let the kids do, I just love the giggles and think that this makes the chicken taste so much sweeter). Put the chicken and let it marinade for at least 2 hours.
Bake at 400 for 30-40 minutes now and then turning the pieces making sure they don`t burn.
