Challenging myself : The November 2009 Daring Bakers Challenge – Cannoli


The November 2009 Daring Bakers Challenge was chosen and hosted by Lisa Michele of Parsley, Sage, Desserts and Line Drives. She chose the Italian Pastry, Cannolo (Cannoli is plural), using the cookbooks Lidia’s Italian-American Kitchen by Lidia Matticchio Bastianich and The Sopranos Family Cookbook by Allen Rucker; recipes by Michelle Scicolone, as ingredient/direction guides. She added her own modifications/changes, so the recipe is not 100% verbatim from either book.


As you can see I did a little MacGyver here.

 

I never had Cannolo myself, but I knew what they are and how to make them. So this Months Challenge was a nice surprise.

I love to fry thing so this was no Problem for me. But I just don`t wanted to make one of the big Cannolis, I wanted something small, cute and more like a Praline.

So the first try was with cacao and red wine. I was not really happy with it, it puffed up like mad, but believe me this cute little things filled with plain butter cream were divine.

So I had done what I wanted, but still there had to be more fun to be had.

And let's not forget the fresh Ricotta I especially made for this occasion. ( find the receipt here).


So I made this little tower with Ricotta and Mascarpone and paired it fresh pineapple. Oh believe me the crispy discs ( this time with white wine and without cacao) with the fatty creaminess were delicious. And who does not love Pineapple?

The crispy discs look great. I wouldn't have thought to use white wine.. mmm.. ricotta and mascarpone + pineapple, sounds like a lovely combo

I love your cannoli stack - and the pineapple is a nice touch. I was wondering whether we had to add the cocoa, because I was keen on "vanilla" cannoli - now I know I don't need it.

Pineapple - what a great idea with cannoli - they do then to be really sweet and some pineapple would definitely cut down on that sweetness. Great combination.

I love the ones with the pineapple, how good of you to try them without the cacao in it, they look gorguous and yummie yummie (I think McGyver would not appreciate that choice of language, haha ;) ). Great Job!!

Your mini cannoli are so cute, and the flavor combo with pineapple sounds so yummy! Great job channeling McGyver - I totally ran out of creative ideas for making tubes, so I just ended up making flat ones.

Love both the mini and stacked cannoli, especially the pineapple and mascarpone! Then again, I would love to fill those minis with pineapple and mascarpone, and pop them in my mouth one by one! Beautifully done..and thanks for deep frying with me!!

Hi Wic, haha I love how being in the DBC bring out the little Macgyver in all of us. Like yourself, I agree the Cannoli recipe is just great, so tasty that even when filled with the most simple fillings it elevates it to another level. Congratulations on actually making the ricotta as well, I can imagine how well it would go with the pineapple.
