Healthy Deliciousness : Whole Wheat Buttermilk Waffles



For a long time I was not able to think about food. I was not in the mood for food.

Things had happened in the Families that had to have priority but now that all is good again I want to have fun.

What better way to begin than with something delicious that is healthy enough that you can have a second helping without feeling bad.

Give it a try, maybe make it your own by adding nuts, fruits or oats.


Whole Wheat Buttermilk Waffles

1/3 cup Butter

2 cups Whole Wheat Flour

2 teaspoons Baking Powder

2 Tablespoons Powdered Sugar

1/2 teaspoon Salt

2 whole Eggs

1 1/2 cup Buttermilk

1 teaspoon Pure Vanilla Extract

Melt butter in microwave and set aside to cool.
Separate the egg yolks from the whites and beat the egg whites to soft peaks.
Whisk together the dry ingredients in a large bowl and preheat your waffle iron.
Whisk the egg yolks together with the buttermilk, butter, vanilla and sugar.
Now add the dry into the wet, this way you will not have flour sticking to the bottom of the bowl.
As soon as the waffle iron is ready slowly fold in the egg whites.
Ladle into the waffle iron and cook until golden brown and delicious.

Makes 10 square waffles.

Hey Wic,

Haven't checked in for awhile. Don't know about you but I put DB challenge on hold. Too much happening. Your waffles look so fluffy! I love the fact that they are whole wheat.

Random question, but do you add the butter into the mixture, or do you use it to coat the waffles in?? I LOVE these waffles just am never quite sure what to do with the butter!
